Black – Any variety of Camellia sinensis that undergoes a multi-step process after harvest of withering, rolling, oxidation and firing. Black tea requires a longer or fully oxidized enzyme process to create the character, color, flavor and aroma. The G. S. Origin: Anhui, China. Congou, pronounced "Kon-goo," is a general name for all non-broken, well-made, black Chinese teas, although many people now use the term for broken teas as well. Due to its superb bouquet, this north China black tea is often referred to as the "burgundy of teas." This full-bodied, sweet liquoring tea produces a dark red cup. Keemun is considered by many to be one of the best China black teas. It makes an excellent "English Breakfast" and is useful for ice tea, in that it does not cloud easily. Its basic character lends itself to aging. Origin: Yunnan, China. Yunnan tea is from the province of the same name bordering Vietnam, Laos and Burma. The area is very mountainous and an indigenous area of tea. Tea bushes grown in this area produce a very thick, glossy, broad leaf. Grown elsewhere, the same bush will produce a typical "China Leaf" look, which is narrow, thin and dull in comparison. Teas from Yunnan range from typical black teas to amazingly colorful, "tippy" teas. Most have a "peppery" quality that is distinctively Yunnan. Yunnan teas are relatively new, as far as Chinese production efforts, having only been in commercial production since 1949. Origin: Guangdong, China. Rose Congou is a black whole well-made OP leaf scented in the same manner as Jasmine. It has a heavy, sweet cup with a distinct rose fragrance. The nose of the cup is much stronger than the taste. The rose petals, like Jasmine are merely for decoration. By the time the tea is ready for packing, the petals have lost all of their fragrance to the tea. Unlike Jasmine, fewer petals in the tea do not relate to a higher quality. Rose Congou is shipped directly to the U.S. through the Chinese port of Fuzhou. Origin: Kopili, Assam, India. The Kopili Tea Estate takes it's name from the sacred River which meanders through these Hills of Assam and empties into the Mighty Brahmaputra in the plains. The soil in this region is predominantly similar to Darjeeling. Kopili Tea Estate is located in the Himalayan foothills at an elevation of around 2500 foot above sea level and is comparable to the Mid elevation Estates of Darjeeling. However, the climatic conditions are different from Darjeeling; the temperature being higher than comparable elevations of Darjeeling. The agro-climatic conditions of the region has also imparted a distinct flavor to the teas which are neither comparable to Assam Teas or to Darjeeling Teas of similar elevation. Above all the caffeine content in the teas is also significantly lower than comparable Assam Teas. Origin: Ruhuna, Sri Lanka. This is a black, orange pekoe blend that is produced in the southern growing region known as Ruhuna. Most Ceylon OP's produced today have a very large, bold leaf. The Ruhuna Blend has a smaller, tighter, twisted leaf which brews a nutty tasting cup. This leaf is better suited to the American and European markets. We select teas that grow in the 1,500 to 2,000 foot level in order to produce a self-drinking blend with good body and flavor. Origin: Kegalle, Sri Lanka. Known the world-over, this tea is a classic version of a Ceylon Orange Pekoe. This blend comes from the southwestern district of Kegalle at an elevation between 1,000 to 2,000 feet. The lower and medium growing elevations give this blend a good balance of weight and flavor. Origin: Uva, Sri Lanka. The G.S. Haly Co. established this blend over sixty years ago. This black pekoe, from the Uva district, has more curl than most pekoe grades and is produced during the peak of the season in August and September. The elevation of the various gardens range from 1,900 to 2,500 feet. Supreme is a medium-grown black tea. Origin: Nuwara Eliya, Sri Lanka. Grown at 4,700 feet in the heart of the Nuwara Eliya district. January/February is the peak season for this unusual tea. Despite its' name, this tea has a dark green leaf with a silver bud running the length of the leaf. Most "bud" type teas are thin in cup and neutral in color. Not this tea. Origin: Ratnapura, Sri Lanka. This blend is named after the southwest Ratnapura district. The extensive mountain ranges and valleys that extend from sea level to 2,000 feet produce teas with a full spectrum of body and flavor. The drier weather from January through March produce the best teas. This blend has a special style leaf that is halfway between a BOP and Pekoe. It produces a dark red cup with a nutty and quite complex flavor. Origin: Galle, Sri Lanka. This is a blend that the British would enjoy for breakfast, a blend of black pekoe leaf from the southern district of Galle. The peak season for this blend is January/February. Like the low grown Assams of India, this tea is grown at approximately 1,000 feet. Origin: Galle, Sri Lanka. This is a typical low-grown black Ceylon tea. Grown in the southwest Galle district, it can be produced almost year round. The average growing elevation for this tea is 1,000 feet and below. It is labeled a BOP but because of the larger size and slight curl to the leaf, it's technically a pekoe. Origin: Southern, Sri Lanka. This tea is decaffeinated with the CO2 Process. This is a Ceylon tea with a classic black, tightly-rolled OP leaf. The liquor has dark red tones. The cup has a mild sweet taste.
