White Tea - Any variety of Camellia sinensis where the immature, un-opened buds are plucked just prior to opening and are not processed. The name comes from the silvery-white hairs on the buds, which give a slight white color. Compared to other teas, it has the lightest liquor ranging from almost clear to pale amber.

White tea is a class unto itself. It is neither steamed nor oxidized and comes mainly from the Fujian province. Our white tea is from a small two acre garden in a hilly/mountainous region of the North Fujian province. The garden is approximately 3,500 feet above sea level. A delicate light green and white leaf, this tea is picked and produced in late March. Most white teas are very attractive but have no flavor. Not this one.
